Territoir Our
vineyards face south-west, which is the ideal exposure for ripening grapes,
and the vines are planted on gentle slopes. The soil is a mixture of galestro
(limestone) and albarese (clayey
calcareous stone) on a rocky subsoil. These elements, together with an
extremely favourable climate and optimum altitude, are essential for a
product of superior quality. |

Fermentation Fermentation and vinification of the grapes takes place in a vat room equipped with huge stainless steel containers and the most modern winemaking equipment. |

The Cellars Colle Bereto’s Chianti Classico ages slowly in new Slavonic oak barrels and casks, under the watchful eye of our oenologists who check on each delicate stage of the ageing process. |

Bottling At the “right moment” our wine is bottled on a sterile bottling line before continuing its ageing process in the bottle, where it develops its full refinement. |

Wine Store Colle Bereto’s special vintages are stored here, in the oldest part of the house, at just the right temperature, far away from daylight and vibrations. |

The Oil Mill The excellent, high quality extra virgin Colle Bereto olive oil is produced here. The secret is in the cold-pressing method, the traditional process used by very few nowadays, and which results in a product with that typically Tuscan taste. |
